Ingredients

  • 1 bag frozen mixed peppers
  • 1 medium sweet onion, chopped
  • 2 cloves of garlic, minced (about a tbsp)
  • 2 cans of BUSH’S Chili Beans (black and red)
  • 2 tsp chili powder
  • Salt and pepper, to taste
  • 20 oz diced tomatoes with chilis
  • 8 oz chickpea pasta or other gluten-free pasta
  • 1 cup of water
  • 1 ¾ cup low-fat cheddar cheese
  • 1 tsp cumin
  • Olive oil

Instructions

  1. In a large pot, heat 1-2 tbsp of olive oil over medium heat. Add onion, garlic, and peppers, saute until cooked through and translucent. Add in beans, spices, and diced tomatoes. Stir until mixed together. Add in water and pasta. Stir again and bring mixture to a boil. Once boiling reduce heat to medium-low and simmer until pasta is cooked through (about ten minutes). Remove pot from heat and stir in cheese until well dispersed. Serve hot with crushed cheddar crackers, tortilla chips, cilantro, and/or avocado, if desired.
