Healthy Vegan Peanut Butter Protein Fudge [gluten-free + no added sugar]

  • Crushed peanuts
  • Mini vegan chocolate chips
  • Drizzle of melted dark chocolate

Instructions

  1. Line a small loaf pan with parchment paper and set aside.
  2. In a mixing bowl, combine the peanut butter, melted coconut oil, and date syrup until smooth.
  3. Add the protein powder, vanilla extract, and sea salt. Stir until thick and creamy.
  4. Spread the mixture evenly into the prepared pan.
  5. Add any desired toppings and gently press them in.
  6. Freeze for at least 1 hour or until firm.
  7. Lift the fudge out of the pan, slice into squares, and enjoy.
