Grate half of a zucchini and squeeze out as much liquid as possible using paper towels or a clean kitchen towel.
Add the zucchini, oats, dates, walnuts, apple butter, and protein powder to a food processor. Pulse until the mixture is thick, sticky, and well combined.
Scoop and roll into 10–12 equal-sized balls.
Place in the fridge or freezer for 15–30 minutes to firm up.
Keep refrigerated in an airtight container for up to one week.
