1/2 of a zucchini, grated
1/2 cup Bob’s Red Mill Rolled Oats (52 grams)
1/4 cup Bob’s Red Mill Coconut Flour (28 grams)
6–7 pitted medjool dates (about 107 grams)
heaping 3/4 cup raw walnuts (88 grams)
1/4 cup unsweetened apple butter
Grate a half a cup of zucchini. Squeeze out excess liquid using paper towels. Place all ingredients in a food processor and pulse until evenly combined. Remove mixture from food processor and divide into 10-12 equal sized bites by rolling the dough in your hands. Place in the refrigerator or freezer to set! Store in the refrigerator.
