Combining the creamy richness of cottage cheese with the nutty goodness of almond flour, these cookies are nutritious, gluten-free, and incredibly satisfying. They’re also VIRAL on TikTok! So of course, you need to give them a try. 😉
Why Cottage Cheese and Almond Flour?
Cottage cheese is packed with protein and offers a creamy texture that enhances baked goods. Almond flour, on the other hand, is low in carbs, rich in healthy fats, and gluten-free, making it a great alternative to traditional wheat flour. Together, they create a moist, tender cookie that’s as healthy as it is delicious.
Ingredients
- 1 cup cottage cheese (preferably low-fat)
- 1/2 cup unsweetened applesauce
- 1/2 cup sugar-free granulated sweetener, coconut sugar, or brown sugar
- 1 tsp vanilla extract
- 1 large egg
- 2 cups almond flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 cup sugar-free dark chocolate chips
- 1/2 cup chopped nuts (optional)
Instructions
- Preheat the Oven: Start by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
- Blend Wet Ingredients: In a large mixing bowl, combine the cottage cheese, applesauce, coconut sugar, vanilla extract, and egg. Use a hand mixer or blender to blend until smooth and creamy.
- Mix Dry Ingredients: In a separate bowl, whisk together the almond flour, baking soda, baking powder, and salt.
- Combine: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.
- Fold in the Chocolate Chips: Gently fold in the dark chocolate chips and chopped nuts, if using.
- Scoop and Bake: Using a cookie scoop or tablespoon, drop rounded portions (about 1.5 tbsp) of dough onto the prepared baking sheet, spacing them about 2 inches apart. You’ll have enough for about 16-20 cookies.
- Bake: Bake for 12-15 minutes, or until the edges are golden brown and the centers are set. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Tips for Perfect Cookies
- Texture: For a smoother texture, blend the cottage cheese thoroughly. If you prefer a bit of texture, leave some curds intact.
- Sweetness: Adjust the sweetness to your preference by increasing or decreasing the amount of coconut sugar.
- Add-ins: Feel free to customize these cookies with your favorite add-ins like dried fruits, seeds, or different types of nuts.

Not sure what went wrong but my cookies came out very flimsy and fell apart, maybe too moist?
Cooked for about 17 minutes and still did not crisp up at all.
Tasted okay but would have liked them more crispy.
Thanks for giving them a try! Could be the brand of cottage cheese you used…some are more “dry” than others. I use Good Culture!
that was probably it, the cottage cheese was pretty wet along with the apple sauce.
Will have to try with dryer cottage cheeses.
Thanks
No problem! You can always put the cottage cheese in a paper towel and squeeze out some the liquid as well!
How many cookies does this make?
Hey there! Scoop about 1.5 tbsps of dough per cookie…you’ll get about 16-20 cookies!
Hello!! I did use good culture but my cookies ended flat but I must say the flavor took me to space. I want to remake, in hopes they turn out like yours. Crossing finger
Thank you for trying them!! 🙂
