How to Make Dairy-Free Marshmallow Protein Bars
- Line an 8×8-inch baking pan or loaf pan with parchment paper.
- Add the almond milk or flax milk and gelatin to a saucepan. Allow the gelatin to bloom according to the package directions.
- Place the saucepan over low heat. Unlike the dairy version, the gelatin takes considerably longer to dissolve. Whisk continuously over low heat for about 15 minutes, monitoring closely until the mixture becomes completely smooth and thin. Do not allow it to boil.
- Transfer the mixture to a high-speed blender, such as a Vitamix. Add the protein powder and blend on medium-low speed.
- Be patient with this step! The dairy-free version takes significantly longer to whip than the original recipe. Blend for up to 10 minutes, or until the mixture becomes thick, fluffy, and approximately triples in volume.
- For classic Marshmallow Protein Bars, pour the mixture into the prepared pan and spread into an even layer.
- For Marshmallow Cereal Bars, gently fold in 3 cups of your favorite cereal before transferring the mixture to the pan.
- Refrigerate for at least 2 to 3 hours, or until completely firm.
- Slice into 8 bars and enjoy!

Tips for the Best Dairy-Free Marshmallow Protein Bars
- Use only unsweetened almond milk or unsweetened flax milk. Oat milk, soy milk, and coconut milk are too thick and don’t produce the same fluffy texture.
- Keep the heat low while dissolving the gelatin. It takes about 15 minutes for the mixture to become smooth, so don’t rush this step.
- Whisk constantly as you heat to prevent clumping.
- Blend on medium-low speed for up to 10 minutes. The mixture should triple in volume before it’s ready.
- If making cereal bars, fold the cereal in gently to maintain its crunch.
- Store the bars in an airtight container in the refrigerator for up to one week.

Frequently Asked Questions
Can I Use Another Dairy-Free Milk?
For best results, stick to unsweetened almond or flax milk. They provide the ideal consistency.
I don’t recommend soy milk or coconut milk because they’re much thicker and don’t whip as well.
Why Does the Dairy-Free Version Take Longer?
Plant-based milks don’t dissolve gelatin as quickly as dairy milk, and they require much more blending to incorporate air into the mixture. Don’t give up! Once the mixture triples in volume, you’ll achieve the same light, fluffy marshmallow texture.
Do These Dairy-Free Marshmallow Protein Bars Need to Stay Refrigerated?
Yes. Because they’re made with gelatin, they should always be stored in the refrigerator.
These Dairy-Free 3-Ingredient Marshmallow Protein Bars prove you don’t need dairy to enjoy a soft, fluffy, marshmallow-like protein treat. Whether you make the peanut butter version featured here or experiment with your favorite Equip Foods flavors, this recipe is an easy, delicious way to satisfy your sweet tooth while fueling your body with quality protein.
