As you know, I am always looking to make healthier versions of my favorite foods! Whether it’s homemade donuts, pie, or brownies…it’s so fun recreating traditional recipes with more wholesome ingredients and still making them taste DELICIOUS. That last part is key. A healthier version of a recipe has to still taste good, ya know?
In addition, when I create my blog posts or recipes, I like to live up to the name of this blog…Healthy Helper. When a good friend of mine asked me to create something to quell her cravings for cookie dough, I couldn’t resist helping her out. The catch? It had to be high protein (to keep her satisfied), vegan (we don’t want any salmonella poisoning around here!), and FULL of peanut butter and chocolate.
Challenge accepted.
Luckily, I had all the ingredients on hand that I needed to create this amazing PB Cookie Dough for One. I grabbed by go-to vegan protein powder, Just Natural Nuzest, and my favorite peanut flour. Protein? Check.
Next I added, non-dairy milk to keep things vegan and create that creamy, smooth cookie dough texture. A little NuNaturals Cocoa Stevia Syrup for sweetness and a handful of Lily’s Stevia Sweetened Chocolate came next.
I mixed everything together in a small bowl and went to peanut butter chocolate chip cookie dough HEAVEN.
Vegan PB Chocolate Chip Cookie Dough for One
- Prep Time: 5 mins

Ingredients
- 2 scoops (25 grams) Just Natural Nuzest Protein powder
- 1/4–1/2 tsp NuNaturals Stevia Cocoa Syrup
- 2 tbsp peanut flour
- 2 tbsp Lily’s Stevia Sweetened Chocolate Chips
- ½ cup cashew milk
Instructions
- Mix all ingredients together in a bowl. Top with additional chocolate chips!
It’s that easy, friends. All you have to do is mix 5 simple ingredients together and you can snack on cookie dough in minutes! I LOVE this cookie dough recipe and have been making it almost everyday, actually. I love dipping rice cakes into it, fruit, or even carrots! Everything tastes good with it and it really has that cookie dough texture. I think the peanut flour and the Nuzest are to thank for that.
Vegan, gluten-free, grain-free, high protein, and full of chocolate and peanut butter, too! I think I hit all the requirements. 🙂
So was it a success? According to my friend (and me!), YES! I was so happy when she approved the recipe. She said it’s been helping her snack healthier during her day and satisfy those cookie dough cravings she’s been having lately. Win-win in my opinion!
