This healthy, vegan Lemon Coconut Loaf is high protein, gluten-free, and has no added sugar. The perfect sweet snack or breakfast for Spring!
If you know me, you know chocolate and peanut butter paired together is my all-time favorite dessert combo. In fact, my grandma’s Peanut Butter Pie (with an Oreo crust 😉 ) is my favorite dessert…EVER. But I still have a soft spot in my heart (stomach?) for fruity treats. Especially when they involve lemon and coconut together!
You’ve seen me pair lemon and coconut together in the past with my Raw Lemon Coconut Bites, but now I’ve baked them into a cake-like loaf that’s perfect for spring and summer snacking.
My Vegan Lemon Coconut Loaf is perfect for a sweet snack, healthy dessert, or even a quick breakfast when you’re pressed for time due to its high fiber and protein content. Made with my favorite Natreve Wellness Vegan Protein of course!

High Protein Lemon Coconut Loaf
This dense, cake-like loaf is perfectly sweet and so lemony! Truly dessert you can feel good about eating. It’s also:
- gluten-free
- full of whole grain fiber
- has no added sugar
- oil-free
And SUPER easy to make! Just mix and bake.
Vegan Lemon Coconut Loaf
- Prep Time: 10 minutes
- Cook Time: 60 minutes
- Total Time: 1 hour 10 minutes
- Yield: 1 loaf 1x
Ingredients
1/2 cup gluten-free oat flour
1/2 cup coconut flour
1 cup Natreve Wellness Vegan French Vanilla Protein Powder
2 tablespoons ground flaxseed
1 teaspoon baking powder
1/2 teaspoon baking soda
1 cup vegan vanilla yogurt (I use KiteHill!)
1.5 cups unsweetened almond milk
2 teaspoons vanilla extract
3–4 tbsp lemon (or the juice of 1.5 fresh lemons)
Zest of one fresh lemon
1 tbsp maple syrup (optional)
1/2 cup coconut flakes
Instructions
Preheat oven to 350 degrees. Spray a bread pan with cooking spray and make sure it is evenly coated. Set aside.
In a large bowl, mix together protein powder, flours, flaxseed, baking powder, and baking soda. Stir well to combine. Sitr in the yogurt, almond milk, lemon zest and juice, vanilla and maple syrup if using. Mix until evenly combined. Fold in coconut flakes and stir until evenly distributed.
Scoop batter into the bread pan and spread evenly. Place in oven on the middle rack and bake for 60 minutes. Let full cool before removing from the pan, slicing, and serving. Store in the refrigerator for up to 5 days.
Notes
Add the maple syrup if you like your baked goods sweeter.
