What Is Biscotti?
Biscotti are Italian cookies baked twice to create their signature crisp, crunchy texture. Unlike soft cookies, biscotti are firm enough to dunk in coffee, tea, or another favorite beverage.
For this version, I added cinnamon, snickerdoodle nut butter, and a chopped cinnamon roll protein bar to give the biscotti a sweet, cozy flavor.
Ingredients Youโll Need
Gluten-Free Oat Flour
Gluten-free oat flour creates a soft, hearty base for these biscotti while keeping them gluten-free.
Almond Flour
Almond flour adds richness and helps give the biscotti a tender, slightly nutty texture.
Cinnamon
Cinnamon is essential for that classic cinnamon roll flavor. Feel free to add a little extra if you love a stronger cinnamon taste.
Monk Fruit Sweetener
Granulated monk fruit sweetener adds sweetness without using traditional granulated sugar.
Coconut Oil
Melted coconut oil helps bind the ingredients together and adds a subtle richness.
Snickerdoodle Nut Butter
Snickerdoodle nut butter gives these biscotti an extra layer of warm, sweet flavor.
Cinnamon Roll Protein Bar
A finely chopped No Cow Dipped Cinnamon Roll Bar adds even more cinnamon roll flavor and creates delicious little bits throughout the biscotti.
Sugar-Free White Chocolate
Finish the biscotti with a drizzle of sugar-free white chocolate. For completely vegan biscotti, be sure to use a vegan white chocolate.
How To Make Vegan Gluten-Free Cinnamon Roll Biscotti
Prepare The Biscotti Dough
Start by preheating your oven to 350 degrees F and lining a baking sheet with parchment paper.
In a mixing bowl, combine the melted coconut oil, plant milk, vanilla extract, and monk fruit sweetener. Stir until well combined, then mix in the snickerdoodle nut butter.
In a separate bowl, combine the gluten-free oat flour, almond flour, baking powder, cinnamon, and sea salt.
Pour the wet ingredients into the dry ingredients and stir until a thick dough forms.
Shape And Bake
Transfer the dough to your prepared baking sheet and shape it into one long rectangle about 1/2-inch thick.
Bake for 25 minutes.
Remove the biscotti from the oven and allow the rectangle to cool for about 20 minutes. This cooling period makes it much easier to slice the biscotti without breaking them apart.
Slice And Bake Again
Once the dough has cooled, carefully slice it into biscotti-sized pieces.
Place the slices cut side up on the baking sheet and return them to the oven. Bake for another 12 minutes, or until the biscotti are golden brown.
Allow them to cool completely. The biscotti will continue to crisp as they cool.
Add The White Chocolate Topping
Melt the white chocolate in the microwave using 30-second intervals, stirring between each interval to prevent it from burning.
Drizzle the melted chocolate over the completely cooled biscotti. Sprinkle the finely chopped cinnamon roll bar pieces over the chocolate.
Place the biscotti in the freezer for at least 30 minutes, or until the chocolate has completely hardened.

- 1/4 cup Snickerdoodle nut butter
- 2 tbsp plant milk
- 1 teaspoon vanilla extract
- 1 chopped-up cinnamon roll or pumpkin spice protein bar of choice (I like IQBar…code healthyhelper saves)
- sugar-free white chocolate (use vegan to make the recipe fully vegan!)
Instructions
- Preheat oven to 350 degrees and line a baking sheet with parchment. Mix together coconut oil, plant milk, vanilla, and monk fruit until well combined. Add nut butter. In a medium mixing bowl, combine flours, baking powder, cinnamon, and salt.
- Pour wet ingredients into dry ingredients and stir until combined and a thick dough is formed. Shape dough into a long rectangle, about 1/2 an inch thick.
- Bake for 25 minutes. Remove from oven and let cool for about 20 minutes before slicing. Place the slices cut side up and bake for an additional 12 minutes until golden brown. Let cool completely to crisp up.
- Melt white chocolate in the microwave (30-second intervals so it doesn’t burn). Once the chocolate is melted, drizzle it on top of the cooled biscotti. Sprinkle No Cow bar pieces on top. Place biscotti in the freezer for at least 30 minutes to harden the chocolate. Store in the fridge and serve with coffee, tea, or hot chocolate!
How To Store Biscotti
Store these cinnamon roll biscotti in an airtight container in the refrigerator. Keeping them chilled helps maintain the texture of the chocolate topping.
They make a great make-ahead snack because their crisp texture holds up well when stored properly.

- Hot chocolate
- Your favorite dairy-free latte

Tips For Making The Best Biscotti
Let The Dough Cool Before Slicing
Donโt skip the first cooling period. The baked dough needs time to firm up before you slice it.
Use A Sharp Knife
A sharp knife will help you make clean slices without crushing the biscotti.
Bake The Biscotti Twice
The second bake is what gives biscotti their characteristic crunchy texture. Make sure the sliced pieces are positioned cut side up before returning them to the oven.
Cool Completely Before Adding Chocolate
Make sure the biscotti are completely cool before drizzling them with white chocolate. Otherwise, the chocolate can melt and slide off.

I donโt purchase anything online (prefer to read labels etc before purchasing). What would be a good alternative to the snickerdoodle nut butter that I have not seen in any store in our area?

You could sub with regular almond butter but they won’t be as good. Can’t vouch for the results!
