For the cookies:

Chai spice blend:

  • 1 tsp cinnamon
  • ½ tsp ginger
  • ½ tsp allspice
  • ¼ tsp cardamom
  • ¼ tsp cloves
  • Pinch of black pepper

For the glaze/frosting:

  • ½ cup Swerve Confectioners
  • 12 tbsp oat milk
  • ⅛ tsp nutmeg
  • Optional: extra chai spice for dusting

Note: If you don’t want to make your own glaze, frost them with vegan frosting!

Instructions

  1. Make the flax egg by combining flaxseed meal with water. Set aside to thicken.
  2. Cream it up: In a mixing bowl, beat vegan butter, oil, and both sweeteners until light and fluffy. Mix in the flax egg and vanilla.
  3. Spice it right: Whisk oat flour, protein powder, baking soda, salt, and all chai spices in a separate bowl.
  4. Combine: Stir dry ingredients into wet until just blended. The dough will be soft.
  5. Chill out: Refrigerate the dough for at least 1 hour (this keeps them from spreading too much).
  6. Bake: Scoop onto a parchment-lined sheet, flatten slightly, and bake at 350°F for 10–12 minutes.
  7. Cool + glaze: Let cool before drizzling with your nutmeg glaze. Sprinkle with extra chai spice for bonus coziness. If you don’t want to make your own glaze, frost them with vegan frosting!
