I think I’ve done a post like this in the past! A killer workout followed by a delicious protein filled snack to feed those muscles you just worked! The perfect pairing for a post and for LIFE! 🙂
I really do enjoy circuit workouts! They’re fun to do when you’re craving some variety in your workout routine…and I have to admit they’re pretty fun to think and make up too! So when I’m not playing around with yoga at home….
Or running to the gym in the frigid temps….
[that’s the distance when I take the shortest route to the gym….that times 2 is there and back with my little gym bag strapped to my back….running with even a bit of extra weight is no joke!]

Coconut Gingerbread Protein Muffins
Ingredients (6 muffins)
- 1 banana (approx. 84 g), mashed
- ½ cup coconut water
- 1 egg white
- ¼ cup whey protein (I used plain but you could use a flavored variety)
- 2 tbsp coconut flour
- 1 tbsp egg white protein
- ¼ cup plain or vanilla greek yogurt
- ½ tsp ginger
- ½ tsp cinnamon
- ¼ tsp nutmeg
- 1/8 tsp cloves
- ¼ tsp baking powder
- ¼ tsp baking soda
- ½ tsp vanilla
Instructions
Preheat oven to 350. Mix wet ingredients together. In a separate bowl mix dry ingredients together. Fold wet ingredients into dry ingredients and stir until evenly combined. Divide batter into 6 muffin tins and bake for 25 minutes. Remove from oven and cool on a wire rack.

These look and sound delicious! I have been wanting to make some muffins and I think these are going to be perfect! 🙂 Also, I love the workout. I am always working out indoors at home, not because I can’t get out, but I try to get in a great workout while baby naps. 🙂

Those muffins sound delicious!! I tend to like liquid snack after a workout, but I know many people prefer something more solid & this is a great alternative!

This workout looks really great. I think i will try it with my husband for our Saturday workout together. I’m not sure what a Pilates Swimmer is, but that’s what google is for right, ha ha? I am guessing you used a sweetened protein powder for the muffins? The kind I have is completely unsweetened (no stevia.)
Nope I used unsweetened protein powder as well! Pilates swimmers are laying flat on your stomach with your arms and legs raised, moving them up and down like swimming!
