Can you believe I’ve never had an acai bowl?
Yup…not one. Even being the major foodie that I am, I’ve never had the opportunity to get one! The one time I planned to try them in NYC, I was greeted with a closed sign on the little cafe I was heading to. BUMMER.
But fate seems to have me in its blessings because just when I was oogling some gorgeous acai bowls on Instagram, I got an email from a friend asking me if I’d like to participate in a SUPERFOOD SHOWDOWN. I had no idea what that was, but I knew I liked the sound of it. 😉
Bob’s Red Mill and Sambazon teamed up to hold an awesome contest for foodies and bloggers alike! They’re calling it the SuperFood Showdown and the challenge is to create a one-of-a-kind recipe tasty enough for a food lover, healthy enough for an athlete!
Yes the Olympics are over, but that doesn’t mean we aren’t all still reminiscing about the amazing feats of the athletes in Rio! So inspired by the games, those two awesome companies are asking a few select people to combine healthy, delicious foods that not only fuel your right, but taste amazing.
I am ALWAYS up for a challenge (especially when it involves food!), so of course I was game!
Once I selected a few Bob’s Red Mill products and got some Sambazon coupons, I went to work on brainstorming my unique snack creation.
What resulted was a delicious mix of cool and creamy, sweet and tart, healthy and delicious. Not to mentioned PACKED with superfoods from the amazing Samabazon Acai sorbet that I used.
Originally I was going to make a homemade Acai bowl using the Sambazon Acai packs, but once I saw their full line of products and found out that they made sorbet, I was inspired to make a crazy delicious SORBET PARFAIT.
Alas, my first meeting with an Acai bowl still hasn’t happened….but I think this recipe wholly makes up for it. 😉
PrintSuperfood Sorbet Parfaits with Gluten-Free Muesli Crisp

Ingredients
- 1 cup Sambazon Acai Sorbet
- For Muesli Crisp-
- ½ cup Bob’s Red Mill Gluten-Free Muesli
- 1/3 cup Bob’s Red Mill Coconut Flour
- 1/8 tsp sea salt
- ½ tsp cinnamon
- ¼ cup walnuts, roughly chopped
- 1 tbsp coconut sugar
- 1 tbsp maple syrup
- 2 tbsp melted coconut oil
Instructions
- Preheat oven to 350 degrees.
- In a large mixing bowl, add all crisp ingredients. Stir to combine, then use fingers to break down any clumps of coconut sugar or coconut flour.
- Spread mixture on a parchment paper lined baking sheet and bake for 8 minutes until golden brown.
- Let crisp cool completely. Split the crisp into two equal portions. Take a tall glass or ice cream dish and layer a 1/3 of the crisp mixture on the bottom, top with ¼ cup of sorbet, and repeat with another 1/3 of the crisp mixture and the remaining ¼ cup of sorbet. Use the remaining 1/3 of your crisp mixture to top the parfait. Repeat this process with a second glass or dish for two servings.

Everyone loves a healthy snack that TASTES like dessert, and this recipe is that. It uses high quality Bob’s Red Mill gluten-free muesli and coconut flour and my latest obsession, Acai sorbet, from Sambazon.
This recipe pretty much proves that when two amazing companies team up, there’s no telling what amazing creations that will come out of it! Sorbet beats smoothie bowl any day in my mind, the closer to ice cream the better! I’ve actually never had an acai bowl either lol. But I have had the Sambazon sorbet and dressing it up with a crunchy crispy topping like this sounds perfect? Good luck in the contest!
