A host of superfoods all in one small bite! These Superfood Peanut Butter Bites are perfect for a boost of energy in your day. They are vegan, gluten-free, no added sugar, and CHOCOLATE-COVERED. Healthy snacking doesn’t get any better!
When it’s consistently in the high 80s every afternoon (Believe me, not complaining at all! Love the hot weather!), I crave something cool, creamy, and energy-boosting in the afternoon. The heat definitely contributes to that afternoon slump we sometimes get. The yawns start happening, fatigue sets in, and it feels like it might be time for a nap. I for one, do not have time for naps and I know a lot of you are super busy too! So what’s a girl to do?
Well if you know me, you know I turn to SNACKS! Not just any type of snack though. It’s got to have certain qualities. DELICIOUSNESS for one, high in protein, good source of healthy fats, preferably only made with natural sugars, and easy to munch on while I’m doing other things.
I have a lot of snack recipes that meet this criteria already but recently I have been craving chocolate and peanut butter like it’s going out of style. I knew I had to satisfy that craving and create a new treat for myself…and all of you, of course!
These Superfood Peanut Butter Bites make for a healthy, decadent snack, that tastes just as good as it is for your body.
Why ‘superfood‘ you ask? Well they’ve got a secret ingredient that really take their nutrition to the next level….avocado!
The avocado lends its creamy texture to make these bites even more smooth and cookie dough-like. It also adds a dose of healthy fats to keep you nice and satisfied till dinner.
Superfood Peanut Butter Bites
- Prep Time: 10 minutes
- Total Time: 10 minutes
- Yield: 12 bites 1x
Ingredients
½ of a ripe avocado
¾ cup natural crunchy peanut butter
1 small banana
¼ cup peanut powder
2 tbsp coconut flour
2 tbsp chocolate vegan protein powder
½ bar of Lily’s Extra Dark Chocolate Bar (or another unsweetened chocolate bar)
1 tbsp coconut oil
Instructions
Blend together avocado and banana in a food processor until smooth. Place mixture in a bowl and stir in peanut butter until well combined.
Add in peanut flour, coconut flour, and protein powder. Mix until the batter resembles cookie dough texture.
Roll batter into 12-13 balls. Place on a parchment paper lined cookie sheet, stick a toothpick in each one, and freeze for 5-10 minutes to harden them slightly.
Melt chocolate and coconut oil in a small pot over medium heat. Once fully melted, remove pot from heat. Dip each bite in the chocolate until fully covered. Place back on the parchment paper. Repeat with remaining bite.
Freeze the bites for 20 minutes. Store in the refrigerator or the freezer.
Vegan, gluten-free, grain-free, and NO ADDED SUGAR…these bites are the perfect snack for any chocolate peanut butter lovers.
These bites are a delight straight out of the fridge or freezer! Cold, creamy, and full of chocolate-peanut butter flavor. They’re the ultimate energy bites and they taste like dessert.
