Even though summer is over, the need for frozen treats hasn’t ended quite yet! With temperatures still in the high 80s in the northeast I know people all over the country could use a fun treat to cool down with. Bonus points if it’s healthy, easy to make, AND delicious!
On a recent trip to Whole Foods, I picked up some of my favorite Wallaby Organic Greek Yogurt (love their Kefir too!) in low-fat Blueberry and whole milk Vanilla flavor. I planned on taking them home and using them for yogurt bowls, overnight oats, etc…like I usually do. But then the idea struck to do a little something different!
Wallaby makes their yogurt using a unique slow culturing process takes twice as long creating a tart free indulgent taste that’s twice as good…so I knew it would work amazingly well in a sweet, treat-like recipe. I’ve made chocolate bark in the past, so why not try making YOGURT BARK…like frozen yogurt! It was a long shot, but I had a feeling it would work since Wallaby’s yogurts are so creamy, thick, and delicious!
With my favorites toppings on hand, I mixed vanilla and blueberry yogurt for a sweet base and then sprinkled layered of superfoods on top until it was well covered. Into the freezer the bark went for a few hours and when I went back to check on it I found a magnificent surprise! Froyo with ALL the toppings in BARK form. AKA a handheld dessert perfect for you and the kiddos to make and enjoy together.
Superfood Greek Yogurt Bark

Ingredients
- For Bark Base:
- 2 5.3 oz Aussie Greek Low Fat Blueberry yogurts
- 1 6 oz Aussie Greek Whole Milk Vanilla yogurt
- 2 tbsp honey (or maple syrup)
- ½ tsp ground cinnamon
- Toppings:
- Finely shredded unsweetened coconut
- Chia seeds
- Dried cranberries
- Raw nuts and seeds of choice (I used sliced almonds, pumpkin seeds, and sunflower seeds)
- Raw buckwheat groats
- Chopped dark chocolate
- Mix together yogurt, honey, and cinnamon in a large bowl. Evenly spread yogurt mixture on a foil lined baking sheet. Sprinkle desired toppings in desired amounts onto yogurt base. Place bark in to the freezer for 3-4 hours until set and hard. Using a sharp knife, break apart the bark and serve chilled in pieces. Store in the freezer.

I do love Greek yogurt, but sometimes it doesn’t have quite enough fat in it for me, so I like buying things like Aussie style yogurt because they’re usually incredibly creamy.
