When I first got back from the Philippines I took comfort in being back in my element. A world full of convenience, simple luxuries, and all the things that make my life easier and “nicer” on a daily basis. Sure it was nice having access to all the toilet paper my heart desires, not having to ask whether the water is safe to drink at restaurants, and being able to dictate my own schedule again. But as time has progressed, I’ve been able to focus in on the things that really make me appreciative of the life I live and the things that fill me with joy and contentment everyday. Turns out most of these special thing aren’t material or even tangible in some cases….just simple things that make me incredibly fulfilled.
I’ve been doing a lot of thinking recently and here are a few realizations I’ve had…
–I love being around family and I am so happy that my sister and I will be neighbors starting a few weeks from now! She’s moving back home from California with her fiance! I always thought it would be bad if they came back home because CA is such a nice place to live and that they might regret it. But now that it’s actually happening I realize how excited I am to have her back and close by. I am so ready to be able to see her whenever I want and to hangout on a regular basis instead of only a few times a year!
–There’s nothing better than having the wind at your back on a bike ride. Just a little nod to good karma and everything being just as it should a certain moment in time.
–Being able to lace up my sneakers at any time of day and know that I can safely run for as long and as far as I want is something I used to take for granted. I love my neighborhood, I love that there are always people around, and I love that our city provides the infrastructure (sidewalks, crosswalks, traffic signals) that allow for pedestrians get around.
–Having access to green spaces is so nice. I love that we have parks, lakes, and walking areas right in the city that I can go to to get away from it all. It’s nice to be able to escape the constant hum of traffic, the restriction of indoor spaces, and be at one with nature if only for the duration of walk with Ella.
–Speaking of Ella, I am so thankful I have her in my life. She brings me so much joy and I am so lucky to be able to provide for her. I saw so many stray dogs and cats in the Philippines, running around with no one to care for them, sickly and in pain….my heart went out to them and I just wanted to take them all in.
–There is no better yoga studio than the one you create yourself. I hadn’t done yoga in months and I’ve been feeling so tight lately so I invited my mom to join me for some yoga outside in our backyard earlier this week. I had never taken my mat outside and practiced on the grass before (don’t ask me why!) and it ended up being one of my favorite flows ever. We practiced for about an hour and I can’t tell you how happy it made me to be in happy baby and be able to look up at the beautiful blue skies. Total bliss.
–Having tons of different foods and ingredients at your finger tips is incredible. I love being able to bake and cook whenever and whatever I like. It has been so nice getting back into the kitchen and being able to eat fresh foods again. There’s nothing better than digging into a plate of delicious food that you made yourself and that your own creativity went into. Check out my first baking endeavor down below….I needed to replenish my muffin stash when I got back:
Perfect Protein Muffins
makes 8 muffins
- 1/2 cup of protein powder
- 1 ripe banana
- 1 scoop of greens powder
- 1/4 cup oats
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 cup applesauce
- 1/2 tsp cinnamon
- 2 egg whites
Preheat oven to 350. In a food processor grind up oats, protein powder, baking powder, cinnamon, baking soda, and greens powder all together. Remove and set aside in a mixing bowl. Process applesauce and banana together. Mix fruit mixture in with dry ingredients and add egg whites. Mix until evenly combined. Separate batter into 8 muffin tins. Bake for 15 minutes.
