Maybe it’s something I see on Instagram that I want to make a healthier version of. Maybe it’s something I have out to eat and want to make a homemade version of.
But what if I told you, THIS recipe was inspired by lotion.

I am not one of those people who spends a lot of money on skincare products, so most of my lotions, skincare products, and even perfumes come from places like Marshalls or TJMaxx.
I recently tried this Lemon Coconut lotion from the brand Everyone for Everybody and FELL IN LOVE with the scent.
It’s SO fresh and fruity…the perfect mix of lemon and coconut with neither being too overpowering.
I got to thinking…I would love to make a snack that TASTES like the way this lotion SMELLS.
And that’s how these Raw Lemon Coconut Bites were born.
Not only did a I nail the flavor…but these bites are easy to make, filled with healthy ingredients, and perfect for satisfying a sweet craving in the most tropical, fruity way ever.
These bites are:
- raw and vegan
- naturally gluten-free and grain-free
- high in healthy fats and fiber
- almond and peanut-free (in case those are allergy concerns)
- NO ADDED SUGAR
AKA the perfect healthy snack…made in minutes!
Grab the recipe below and make these for healthy snack to take with you on the go all week long.
Raw Lemon Coconut Bites
- Prep Time: 10 minutes
- Total Time: 10 minutes
- Yield: about 25 bites 1x
Ingredients
1 1/4 cup raw cashews
heaping 1/2 cup of raw macadamia nuts
5 tbsp lemon juice
1 cup unsweetened shredded coconut
20 medjool dates, pits removed (about 2 cups)
Instructions
Place all ingredients in a food processor and blend until dates and nuts are broken down. Scoop mixture into a bowl and roll bites in your hand until the mixture is used up. You’ll be able to make about 25 bites depending on the size you make them. Store in the refrigerator in a gallon-sized ziploc bag or tupperware.
