Pumpkin Power Cookies

Ingredients

  • 1 cup pumpkin
  • 1/4 cup unsweetened applesauce
  • 1/4 tsp. cinnamon
  • 1/2 tsp. pumpkin pie spice
  • 1 tbsp protein powder of choice
  • 1 ripe banana, mashed
  • 1 tbsp agave nectar or maple syrup
  • heaping 1/4 cup raisins
  • 2 tsp cocoa powder
  • 1 1/2 cups rolled oats

Instructions

  1. Preheat oven to 350 degrees. Combine all the ingredients in the order listed. Mix until well combined. Drop cookies (by the heaping tbsp) onto baking sheet (use parchment paper or spray baking sheet with cooking spray) and press down slightly. Bake for 17 minutes.
