Protein Puppy Chow Popcorn

4 cups puffed corn cereal

1/4 cup No Cow Chocolate vegan protein

2 tbsp powdered monk fruit

2 tbsp peanut powder

3/4 cup sugar-free chocolate chips

1 tbsp coconut oil (optional)


Place puffed corn in a large mixing bowl. In a small bowl, whisk together protein, monk fruit, and peanut powder, set aside.

In a microwave-safe bowl, microwave chocolate chips and coconut oil for a minute. Stir and continue microwaving in 30-second intervals until fully melted.

Pour chocolate over the puffed corn mixture and add protein mixture to puffed corn and toss to coat. Stir with a rubber spatula until evenly coated.

Store in the fridge for up to a week!
