Ever since making these bars…
There has been a TON of brainstorming going on over here!
It all started because I wanted to try and create an oat based bar that was similar to Nakd bars…(my UK bar obsession)
These babies aren’t exactly the same but I was SO happy with how they turned out! So happy in fact that I realized how great of base for other bars they were!
Seriously there are so many possibilities…here’s just a few I’ve thought up:
-Adding 2 tablespoons of cocoa powder and 1/4 cup crushed peanuts
-Adding a 1/2 cup of pumpkin and 1/4 cup raisins
-Adding 1/2 cup applesauce and 1/4 cup crushed walnuts
-Adding 1/4 cup peanut flour and 1/4 cup strawberry jam
Or you could try the variation I made this weekend…
Banana Buzz Bars
After trying those cappuccino larabars a few weeks back, I have been on a coffee kick!!
I knew I wanted to incorporate coffee flavor into these bars somehow and luckily I had some instant coffee on hand to experiment with!!
Makes 12 bars (3 bars=one serving!)
adapted from the original Banana-Date Oat bars
-1 tablespoon instant coffee (For a more pronounced coffee flavor use 2 tablespoons! That’s what I did!!)
-2 tsp pure vanilla extract
-2 very ripe bananas bananas
-1 cup oatmeal
-1/2 cup+2 tablespoons wheat bran
-1/2 tsp cinnamon
Blend dates, banana, coffee, vanilla, and cinnamon in a food processor until well mixed. Add oats and wheat bran and process again until fully combined. (add a bit of water if the mixture is to dry!)
Spread mixture evenly onto a parchment paper lined baking sheet. Bake at 350 for 17minutes or until set. Freeze for at least two hours. Slice into twelve pieces and store them in the freezer!
Perfecto! Just the right amount of coffee flavor and a perfect little pick me up to go with your afternoon snack!
These would probably taste awesome with a little cocoa powder or some dark chocolate chips sprinkled in as well!
I can’t wait to try out some of the other variations I mentioned above. Let me know if you come up with any other add-in ideas or if you try any of the ones I listed!
Don’t you just love when you find a great base recipe that is so versatile that it lends itself to a ton of adaptations?!
