Contrary to popular opinion, I didn’t think 2016 was too bad of a year. In fact, it got better as the year went on. The end of the year was especially filled with good stuff!
I ran my first marathon, I moved into my first apartment, I had a lovely holiday season, with the family, I grew my virtual assistant business, and I got some GREAT news from one of my favorite companies. The news was so good in fact, that I thought I’d share it with you all today. It’s about time!
Before I reveal, let me remind you, I am obsessed with fruit-sweetened baking. In fact, it’s my signature. I love making no added sugar recipes that everyone can enjoy and proving the world that nature’s bounty is sweet enough on its own. There’s no need for granulated sugars, honey, syrups, or artificial sweeteners when we have nature’s candy within our reach. Fruit truly is amazing. Applesauce is a go-to of mine. Mashed banana is another. But my all time favorite fruit to use in baked goods as a sweetener? MEDJOOL DATES.
Nothing beats Medjool dates for sweetening a recipe in my opinion. Their deliciously caramel-like flavor and soft texture make them perfect for adding to any kind of recipe you can think of. I’ve used them in bars, muffins, muffin tops, candy, and a ton of other recipes in my archives. I just love using them when their available and I am never disappointed in the results I get from baking with them.
So what does all this Medjool date talk have to do with anything? To kick things off, I have a delicious baked oatmeal recipe to share with you. This recipe is literally a tropical vacation for your taste buds and tummy! Pineapple, pistachios, coconut, and of course, sweet sweet Medjool dates combine for a breakfast that tastes like dessert.
Move over bland baked oatmeal of yesteryear, this Pineapple Pistachio Baked Oatmeal with Medjool Dates & Coconut will take your love of sweet breakfasts to a whole new level. Aside from being super easy to make and great for prepping ahead on the weekend, it’s also vegan, gluten-free, and…do I even have to say it…100% fruit sweetened.

Ingredients
- 2 1/2 cups gluten-free muesli (such as Bob’s Red Mill)
- 2 tsp baking powder
- ½ tsp salt
- ½ tsp cinnamon
- 1 tsp ground ginger
- ¼ cup almond meal
- 1 tbsp gluten-free egg replacer (such as Bob’s Red Mill) + 2 tbsp water
- 1 1/2 cups non-dairy milk
- 8 oz canned crushed pineapple, well drained
- ½ cup roasted salted shelled pistachios, chopped
- ½ cup shredded unsweetened coconut
- ¼ cup + 2 tbsp Natural Delight’s Medjool dates, pitted and chopped
Instructions
- Preheat oven to 400. In a mixing bowl combine canned pineapple, milk, and egg replacer mixture. In a separate bowl, combine muesli, almond meal, salt, spices, and baking powder. Fold dry ingredients into wet ingredients and stir until combined. Add pistachios, dates, and coconut. Gently mix until combined. Place mixture in a 8×8 baking dish. Bake for 40 minutes. Oats should be slightly browned on top. Remove from oven and let cool. Store in the fridge. Serve with yogurt, milk, extra fruit, or your favorite syrup!
Full of fiber, protein, and whole grain goodness, this baked oatmeal is satisfying and so darn yummy. Top it with yogurt, more fruit, or maybe even some maple syrup. But like I said before, it really doesn’t need any other sweeteners because of the amazin’ Medjool dates that are in it. Each bite is studded with soft n’ chewy Medjool date pieces and sweet tropical flavor. You’ll mmmmm your way through your breakfast if this is on the menu.
Like I said at the beginning of this post, 2016 was a good year for me. I can only imagine 2017 will be even better given my partnership with Natural Delights!
