What Is Kabocha Squash?
Kabocha squash is a Japanese winter squash with a deep green exterior and bright orange flesh. It’s naturally sweet and has a dense, starchy texture that makes it especially delicious when roasted.
When cooked, kabocha becomes tender and creamy on the inside while the edges can become lightly caramelized and crisp.
If you’ve never tried kabocha before, this is a great recipe to start with. The cinnamon or pumpkin pie spice highlights the squash’s natural sweetness and makes it especially delicious during the fall and winter months.

Tips For The Best Air Fryer Kabocha Squash
Cut the squash into similar-sized pieces. This helps everything cook evenly and prevents smaller pieces from becoming overcooked while larger pieces are still firm.
Don’t overcrowd the air fryer. Spread the squash into as even a layer as possible for better browning. This is the air fryer I use!!
Use parchment paper. Since we’re not using oil, parchment helps prevent the egg-white coating from sticking to the air fryer basket.
Adjust the spices to your taste. Cinnamon gives the squash a simple sweet flavor, while pumpkin pie spice makes it taste even more like fall.
Toss halfway through cooking. This helps the squash cook and brown more evenly.

How To Serve Roasted Kabocha Squash
This easy roasted kabocha squash is incredibly versatile. Enjoy it as a healthy side dish alongside your favorite protein, add it to a fall-inspired grain bowl, or eat it straight from the air fryer as a protein-packed snack.
You can also pair it with Greek yogurt or your favorite high-protein dip for an extra boost of protein.
For a sweeter option, add a sprinkle of cinnamon after cooking and serve it warm.
How To Store Leftover Kabocha Squash
Store leftover roasted kabocha squash in an airtight container in the refrigerator for up to 3 to 4 days.
To reheat, place the squash back in the air fryer at 350°F for a few minutes until warmed through. This helps bring back some of the roasted texture.
Frequently Asked Questions
Do You Have To Peel Kabocha Squash?
No! Kabocha squash skin is edible when cooked. If you prefer, you can peel it before cutting, but leaving the skin on saves time and adds texture.

Kabocha squash is a nutrient-dense winter squash that provides carbohydrates, fiber, vitamins, and minerals. Its naturally sweet flavor makes it a delicious addition to both sweet and savory recipes.
Can You Make Kabocha Squash Without Oil?
Yes! This recipe shows how to make roasted kabocha squash completely oil-free. Liquid egg whites replace the need for oil while also adding protein.
Can I Use Pumpkin Pie Spice Instead Of Cinnamon?

If you’re going through treatment, WHY ON EARTH would you be looking for ways to exclude things like healthy fats in recipes, or even posting recipes at all? Especially one with egg whites? It seems like you’re doing things exactly as you were before when you really need to be getting out of that “HLB” mentality.
This post was written and scheduled long before I went away. Also, the whole point of a balanced, healthy diet is that ALL FOOD FITS. Including egg whites. I would never eat this on it’s own and would always pair it with a meal full of healthy fats. Some recipes have less calories and fat than others and certain people have to follow diets with those needs. So this recipe is tailored for people that don’t usually use oil or can’t have it in their diets for certain reasons. Also, I’ve used oil to roast kabocha before, and this technique results in much better taste and texture…so that’s why I use it!
I does look yummy! — I’d love to sprinkle some Parm on it! Sunchokes are super easy to roast this way too
Ooooh that sounds like a good idea! I typically like my kabocha sweet but a savory version might be delicious!
Great idea to use the egg white! Can’t wait to try!
What is wrong with using a little healthy fat like coconut or olive oil to roast the veggies? I don’t think it’s healthy to neglect fats in ones diet.
Nothing wrong with it at all! Like I said to another commenter…I have just found that this method produces the best texture results. I like the way this recipe turns out better than when I use oil! :)
I AM SO FRIGGIN IN LOVE WITH THIS SQUASH AND ACORN SQUASH right now! I have a sickness! LOL!
YES! The obsession is REAL.
I love that you wrote about Kabocha squash. My absolute favorite winter vegetable. I lived off it when I worked at the farmers market in Southern California and now I miss it here in England! I used to just throw the entire thing in the oven and rip off pieces as a snack =)
They are so good! I honestly think I’m addicted. LOL
I love and miss kabocha–they don’t have it where I am over here! :[
Awww I’m sorry! I don’t know what I’d do if I couldn’t get it all year long!
Squash is one of my favourite vegetables, and simple and roasted, you can never go wrong. Looks delicious! Thanks for sharing!
Let me know if you try it like this!
I never thought to add egg whites to the squash. Genius! Can you eat the green outer parts of the kabocha? I thought only the insides were edible.
Yes you can definitely eat the skin! I LOVE it.
