Nutty Apple Loaf

Ingredients

  • 1/3 cup peanut butter
  • 2 tbsp maple syrup
  • 1/4 cup coconut sugar
  • 1.5 cup unsweetened applesauce
  • 2 tbsp coconut oil
  • 1/4 cup almond milk
  • 1 tbsp Bob’s Red Mill Egg Replacer + 2 tbsp water, let sit for 1 minute to thicken
  • 2 tsp vanilla
  • 1.5 cups Bob’s Red Mill 1-1 Gluten-Free Flour
  • 1/2 cup unsweetened coconut flakes
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1 small apple, cored and chopped
  • 1/4 cup walnuts or peanuts, chopped

Instructions

  1. Preheat oven to 350 degrees and line a loaf pan with parchment paper or cooking spray.
  2. Combine all dry ingredients in a large bowl and combine all wet ingredients in medium bowl.
  3. Add wet ingredients to dry ingredients and mix until just combined. Fold in apples and walnuts.
  4. Pour mixture into loaf pan and bake at 350 for 55 minutes. Cool for about 20 mins before slicing and serving.
