Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the oat flour, coconut flour, oats, protein powder, monkfruit sweetener, sea salt, cinnamon, baking powder, and flax seeds.
  3. In a separate bowl, mix together the sunflower butter and applesauce until smooth. Add the wet ingredients to the dry ingredients and stir until combined.
  4. Add milk 1 tablespoon at a time until the dough becomes slightly sticky but scoopable. Protein powder tends to absorb moisture quickly, so adjust as needed.
  5. Fold in the sunflower seeds, pumpkin seeds, chocolate chips, and chopped dates. Using your hands works best here to evenly distribute all the goodies.
  6. Scoop about 1 tablespoon of dough per cookie onto the prepared baking sheet and gently flatten them since the cookies won’t spread while baking.
  7. Bake for 12–14 minutes, then let cool completely before eating.
