Ingredients

  • 1 cup cooked quinoa, cooled
  • 1/2 cup pumpkin seeds (pepitas)
  • 1/4 cup date syrup (HEALTHYHELPER saves $$!)
  • 1/4 cup dried cranberries
  • 1/4 cup shredded coconut (unsweetened)
  • 1 teaspoon ground cinnamon
  • Pinch of sea salt

Instructions

  • In a large bowl, combine quinoa, pumpkin seeds, date syrup, cranberries, coconut, cinnamon, and salt.
  • Mix until well combined, then roll into bite-sized balls.
  • Chill in the refrigerator for 30 minutes before serving.
