Ingredients

  • 1 container The Soulfull Project Brown Sugar Pecan Multigrain Cereal
  • 1 tbsp coconut flour
  • 1/2 tsp ground cinnamon
  • 1 scoop vanilla plant-based protein powder, 30 grams (I used vanilla Nuzest)
  • 2 tbsp natural pecan or almond butter
  • 1 tbsp maple syrup
  • 1/4 cup non-dairy milk (I used almond milk)

Instructions

  1. Line a plate with baking paper and set aside.
  2. In a large mixing bowl, combine the cereal, coconut flour, cinnamon and protein powder and mix well.
  3. Stir in the nut butter and maple syrup until a crumbly mixture is formed. Using a tablespoon at a time, add non-dairy milk until a thick batter is formed. Using your hands, form into 3 GIANT rounded cookie shapes and enjoy immediately or refrigerate for one hour for best taste.
