Your pie dreams have come true with this healthy Chocolate Pudding Pie recipe! Creamy, delicious chocolate pudding finds a home within a gluten-free, vegan, naturally-sweetened crust. The heavenly mix of textures and rich taste will have you smiling all the way through your slice (or two!)!
One of my dreams is to one day have a HUGE party where all my friends I’ve met from travel and social media around the world can attend and meet each other in person.
Some of the BEST people I’ve ever met and most of my closest friends are people I’ve met on my solo travels or through the internet. It’s amazing who you can connect with in our overly connected world nowadays.
This gathering would ideally take place somewhere warm, somewhere with great FOOD, and at a time that works for everyone’s schedule.
That last criteria would most likely present the biggest issue. But a girl can dream, right?
To remedy this in the meantime, I thought it would be fun to share a recipe I’m making for a ‘Friendsgiving’ holiday party I’m attending this month! I love the idea of getting together with friends during the holiday season outside of all the family events. Some friends are like family anyways, so it’s nice to share the season with them as well.
Everyone has to come up with a signature dish, side, or dessert to contribute to the ‘Friendsgiving’ feast. How fun is that!? Even if you we don’t see each other as often as we’d like during the year, we can s
hare a festive meal together and make memories over the holidays.
I’ve been racking my brain trying to determine what dish I would bring to our ‘Friendsgiving’.
Something traditional?
A new recipe, perhaps?
Main dish or a treat?
In the end, I decided to go with a delicious holiday dessert dessert I’ve been making for years now but have never shared on the blog before!
That’s right, I created this amazing dessert all the way back in 2015, but never found the right time to share it. Once you see what it is, I think you’ll agree it’s PERFECT for the holidays and for a ‘Friendsgiving’ feast.
And of course, baking during the holiday season is IMPOSSIBLE without Bob’s Red Mill products! They are my staple baking products year round. But during the holidays, when you want to ensure your treats are of the highest quality, Bob’s Red Mill products are a must.
My Low-Fat Vegan Chocolate Pudding Pie is only as delicious as it is because of the Bob’s products used to make it including: coconut flour, gluten-free rolled oats, and potato starch.
This pie is a healthier version of a pie my mom used to make for me as a kid. Her version had a graham cracker crust and was filled with instant chocolate pudding.
My version has a whole grain, gluten-free crust filled with creamy, high-protein, vegan chocolate pudding made with a secret ingredient. 😉
Low-Fat Vegan Chocolate Pudding Pie
- Prep Time: 2 hours
- Cook Time: 20 mins
- Total Time: 2 hours 20 minutes
- Yield: 1 pie (8 slices) 1x

Ingredients
For crust:
2 cups Bob’s Red Mill old fashioned rolled oats
1/2 cup Bob’s Red Mill coconut flour
1/2 cup unsweetened applesauce
2 tbsp neutral oil
For pudding filling:
24 ounces medium or firm tofu
1/2 cup cocoa powder
1/4 sugar free granulated sweetener
3 tbsp Bob’s Red Mill potato starch
Vegan chocolate chips, for topping
Instructions
Preheat oven to 375 degrees. In a blender or food processor, blend oats and coconut flour until oats are fine and everything is well mixed. Place the flour mixture in a bowl and mix with oil and applesauce until a dough is formed. Spray a glass pie dish with cooking spray and press dough into it. Set aside.
Rinse out blender and place tofu, sweetener, cocoa powder, and starch into it. Blend until creamy and smooth. Pour pudding mixture in a bowl and place in the fridge for at least 2 hours.
Meanwhile, bake pie crust for 20 minutes. Remove crust from oven and let cool.
Check on pudding after a few hours. Once it’s thickened, spread pudding in the pie crust. Sprinkle the top with chopped chocolate chips if desired. Cut and serve chilled!

Pie is a MUST during the holidays and no one can argue with chocolate pudding! Especially when it’s vegan and made with TOFU. Fun twist, huh?
Tofu is SO versatile and using it to make the pudding for this pie means the whole recipe is dairy- and nut-free. The pudding is also great on its own if you don’t feel like making the crust.
I think this is one of the easiest pies you’ll ever make. Well aside from picking up a store-bought one. 😉 But homemade is just so much better (and healthier!)!
