I am a simple girl when it comes to nut butters. Sure, I like all the fancy flavored varieties and interesting blends…but when it comes down to it, my all time favorite will always be peanut butter. Classic peanut butter. There’s nothing like dipping apple or carrot slices into chunky pb or biting into a freshly made peanut butter and jelly with its perfect balance of sweet to salty flavor.I’m a purist with my peanut butter as well. The less ingredients the better. In fact, one just peanuts is my ideal kind! I really enjoy the flavor of peanuts themselves so I don’t need any salts or sugars to detract away from their naturally delicious taste.I think that’s why I like peanut flour so much, too! Pure powdered peanuts. It doesn’t get much simpler than that if you want real peanut flavor. The uses for peanut butter only go so far because of its consistency, but with flour I am able to add that peanut taste I love to whatever my heart desires. Baked goods, smoothies, or my favorite…as topping for ice cream!
Heck, I think I could spoon this stuff right out of the bag! (Hmmm, perhaps this will become the new cinnamon challenge? 😉 )
While that was a tempting thought, I decided to use find new way to enjoy peanut flour the result was a nutritious, portable snack that would allow me to satisfy my peanut butter cravings anytime, anywhere.
With a lot of people trying to improve their eat more balanced in the new year, it’s the perfect time for me to share these Low-Fat PB & J Bites. One of the keys to eating well is to consistently nourish your body, keep your blood sugar level, and DO NOT SKIP MEALS.This means SNACKING! Usually, a diet no-no, I think it’s one of the best things you can do for you body and your mind. No one likes to get hangry and these bites have just the right mix of macronutrients to keep you energized, satisfied, and happy between meal times!
Peanut flour has 85% less fat than traditional peanut butter so these bites are low in fat, but high in protein. Don’t feel bad for eating more than one….their soft, cookie dough-like texture is pretty irresistible!
Low-Fat PB & J Bites

Ingredients (6 bites)
- 2 small whole carrots (85 grams), roughly chopped
- 1 oz unsweetened dried cherries
- 1 tbsp cherry jam
- 1/2 tsp vanilla extract
- 1/3 cup rolled oats
- 1/4 tsp cinnamon
- 3 tbsp peanut flour
Place carrot pieces in a food processor and blend until finely chopped. Add cherry jam, vanilla, and dried cherries and process until smooth. Add oats, peanut flour, and cinnamon. Blend until evenly combined. Remove mixture from food processor and divide into 6 equal bites by rolling the dough in your hands. Place in the refrigerator or freezer to set! Store in the refrigerator or freezer.
Only sweetened with natural fruit jam and unsweetened dried cherries these bites are very low in sugar. The addition of carrots contributes to the sweetness as well, while adding fiber and a serving of vegetables!Whole grain, vegan, and gluten-free, these bites
