A discussion on why I am now eating Quest bars, plus a step by step guide to making QUEST BAR COOKIES!
Well this is a post I definitely thought I’d never be writing! Ha!! But as you’ll see, people change, opinions shifts, and it’s only normal to evolve and change as the world around you does.
If you follow me on Instagram, you may have seen me post this picture and this caption last week.
I posted this on Facebook last night and I thought it warranted sharing here since I think it’s important to admit when you’ve changed your mind or were wrong about something. For years now, I’ve sworn off Quest bars. Yes I LOVE their chips and protein, but the bars were sweetened with Sucralose which makes me ill. I recently, however, changed my mind about Quest bars once I tried their new #stevia-sweetened Mocha Chocolate Chip bar (you may have seen me eat these on my IG stories). I’ll only eat the stevia-sweetened bars since sucralose makes me sick as I mentioned…but I am happy to see the company moving towards more #natural ingredients. I plan on writing a WHOLE post on this topic so stay tuned for that.

Now don’t get me wrong, I am still ALL about whole, REAL foods whenever possible. But every once in awhile for convenience (and to mix things up) it’s nice to have a protein bar. I enjoy them and they work for me and my lifestyle.
When Quest first came out with their Mocha Chocolate Chip bar I was skeptical. Sure it was sweetened with stevia but would it be palatable? Well to my surprise, not only did it taste good, but without the sucralose, I didn’t get a stomach ache or any signs of sickness afterwards! WIN.
I really like that Quest is moving in the direction to accommodate people who prefer more natural ingredients. It just goes to show that companies can change just like people do! In fact, they have SEVERAL flavors that are only sweetened with stevia and erythritol! They are…
and of course, Mocha Chocolate Chip!
All these amazing flavors are Soy Free, Gluten Free, and Vegetarian Friendly. The company has committed to only using quality ingredients, which is why they made the switch from IMO to SCF (as the fiber source!). Each bar has 20 grams of protein, 4-7 net carbs, 170-210 Calories, 13-15g fiber, and no added sugar. All good stuff in my book! They’ve even been named the #1 bar in terms of accuracy on their nutrition labels. That is so important to me given how faulty nutrition labels can be nowadays and how much leeway companies are given to ‘fluff’ their numbers.
Usually I order my bars online, but I recently noticed all my favorite flavors are being sold in 4 packs at TARGET!!! Score. I recently went and picked up some of their stevia-sweetened flavors: Chocolate Peanut Butter and Double Chocolate Chunk. I hadn’t tried these flavors yet and I wanted to make some cookies with them. Did I mention that’s my favorite way to eat Quest bars!? Baked into little cookies! They legit taste like fresh-baked, homemade ones. It’s crazy!
Here’s my STEP BY STEP process on how to make PERFECT Quest Bar Cookies.
Gather your ingredients (oh wait…all you need is a Quest bar!).
Unwrap Quest bar and heat in the oven on a plate or piece of parchment paper for 5-7 seconds to soften.
Cut softened bar into 8 equal pieces. I usually slice mine horizontally and then vertically.
Using the back of a measuring cup or your fingers, press down on the bar pieces to form cookie-like circles. Place unbaked Quest cookies on to parchment paper on a baking sheet.
Bake cookies at 350 for 7 minutes.
Remove cookie tray from oven and flip cookies over. Place back in the oven and bake for an additional 2 minutes.
Let cool on a baking rack for crispy cookies or enjoy nice and hot from the oven!

Sorry if I disappointed some people with my change of heart, but I think we are all allowed to change our mind sometimes. As long as we’re honest about the change, I don’t see a problem with it.
