With New Year’s celebrations right around the corner and football playoffs coming up, I’ve been experimenting with all sorts of healthy snack and appetizer options for you to make at home.
Just because we won’t be going out and celebrating or having huge watch parties like usual doesn’t mean we can’t have fun at home with some good company and good eats.
Salty Savory Goodness
Speaking of good eats, I have been OBSESSED with FitJoy Grain-Free Pretzels lately.
I first tried them last year when they were first released and made these tasty Healthy Chocolate Covered Pretzels with them.
Since then, they’ve come out with 3 new flavors including:
Honey Dijon (which is my current favorite and the inspiration for this recipe!)
They’re by far the healthiest pretzels I’ve seen on the market made with ingredients like: cassava flour, potato starch, chickpea flour, high oleic sunflower oil, tapioca starch, chickpea protein, Himalayan sea salt, and organic honey!
Simple, whole food ingredients with all the crunch and savoriness you love about traditional pretzels. They’re also gluten-free, corn-free, dairy-free, and plant-based! 🙂
Honey Dijon Cauliflower Pretzel Poppers
2020 was the year of CAULIFLOWER and I don’t think it’s going anywhere any time soon. As I was snacking on some of the Honey Dijon FitJoy Pretzels I started to think about how good they’d be as a coating for some baked cauliflower bites. I’ve been making Buffalo Cauliflower all year and have been looking for a way to switch things up, so this seemed like the perfect way to experiment.
The results were BETTER than expected and I’ll definitely be making these Honey Dijon Cauliflower Pretzel Poppers on the regular.

- Cook Time: 20 minutes

Ingredients
16 ounce bag of cauliflower florets (or a medium head of cauliflower cut into florets)
1 bag of FitJoy Grain-Free Honey Dijon Pretzels
2 eggs (sub in 2 servings of vegan egg replacer for a vegan option)
Instructions
Preheat over to 400. Place pretzels in food processor and process until finely crumbled. Pour pretzels into a gallon-sized bag. In a separate bowl, whisks eggs. Place cauliflower into the beaten eggs and toss with tongs to evenly coat cauliflower with eggs. Using tongs place cauliflower into the gallon-sized bag with pretzel mixture (don’t pour them in from the bowl because you don’t want the excess egg in the bag).
Seal bag and toss until cauliflower is evenly coated with pretzel crumbs. Using tongs, remove the cauliflower pieces from the bag and place on a parchment paper lined baking sheet.
Bake for 20-25 minutes or until cauliflower is cooked through (use a fork to check).
Serve immediately.
3 ingredients. Gluten-free. Grain-free. Paleo-friendly. Dairy-free. Done in less than 30 minutes. AND easily made vegan?! What’s not to love?
