  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix Dry Ingredients: In a mixing bowl, combine almond flour, cocoa powder, chocolate protein powder, baking powder, and salt. Mix well to ensure even distribution of ingredients.
  3. Combine Wet Ingredients: In a separate bowl, whisk together almond butter, Greek yogurt, unsweetened applesauce, and vanilla extract until smooth and well combined.
  4. Form Dough: Gradually add the wet ingredients into the dry ingredients, stirring until a thick, cookie-dough-like consistency forms. If desired, fold in sugar-free chocolate chips for an extra touch of chocolatey goodness.
  5. Shape Cookies: Using a spoon or cookie scoop, scoop out portions of dough and place them onto the prepared baking sheet. Use your hands to gently flatten each portion into a cookie shape, as these cookies won’t spread much during baking.
  6. Bake: Place the cookies in the preheated oven and bake for 10-12 minutes, or until the edges are set. Be careful not to overbake to keep them moist and chewy.
