Preheat your oven to 375°F. Slice the bagels into thin rounds, aiming for about 1/8 to 1/4 inch thickness. Spread the slices in a single layer on two parchment-lined baking sheets.
Lightly spray both sides with avocado oil spray and sprinkle with everything bagel seasoning. Bake for 6-8 minutes, flipping halfway through, until the chips are lightly golden and crisp on both sides. Let them cool completely after baking so they firm up even more.
