Instructions
Line an 8×8-inch baking pan with parchment paper.
Add pretzels and oats to a food processor and pulse until the pretzels are broken into small pieces and the oats resemble a coarse flour.
Add peanut butter, date syrup, protein powder, and Medjool dates. Blend until a thick dough forms. If needed, add non-dairy milk one tablespoon at a time until the mixture sticks together easily.
Press the mixture firmly into the prepared pan.
Melt chocolate chips and coconut oil together in the microwave in 30-second increments, stirring between each until smooth.
Spread melted chocolate evenly over the bars. Top with crushed pretzels and flaky sea salt if desired.
Refrigerate for at least 1 hour until fully set.
Slice into bars and store in the fridge for the best texture.
