High-Fiber Chocolate Chip Cookies

Instructions

  1. Preheat your oven to 350 F and line a baking sheet with parchment paper.
  2. In a blender or food processor, combine the warm water and Medjool dates. Blend until smooth and thick like a paste.
  3. In a medium bowl, whisk together the oat fiber, almond flour, baking soda, and sea salt.
  4. Add the date paste and vanilla to the dry ingredients and stir until a soft cookie dough forms. Keep mixing until fully combined.
  5. Fold in the chocolate chips.
  6. Roll into 10 evenly sized balls and place on the prepared baking sheet. Gently press each one down to slightly flatten.
  7. Bake for 11 minutes. They will look underdone, and that is expected.
  8. Remove from the oven and let the cookies cool completely on the baking sheet so they firm up and develop the right texture.
