  1. Preheat your oven to 350°F and line a baking sheet with parchment.
  2. Mix your dry ingredients: almond flour, whey isolate, a sugar-free sweetener (like monk fruit or erythritol), baking soda, and a pinch of salt.
  3. Whisk together melted coconut oil (or unsalted butter), an egg, and vanilla.
  4. Combine the wet and dry ingredients until just incorporated.
  5. Fold in dried cranberries + white chocolate chips.
  6. Scoop out tablespoon-sized cookie rounds and gently flatten them.
  7. Bake 10–12 minutes, until cookie edges are lightly golden.
  8. Let cool on the sheet for 5 minutes, then transfer to a cooling rack.
