  1. Preheat Your Oven: Set your oven to 350°F (175°C) and line a small baking sheet with parchment paper.
  2. Mix Your Ingredients: In a small bowl, combine all the ingredients. Adjust the almond milk to create a thick, slightly sticky dough.
  3. Shape Your Cookie: Form the dough into a cookie shape and place it on the prepared baking sheet.
  4. Add Optional Toppings: Sprinkle chopped peanuts on top if you’re a fan of extra crunch and nutty flavor.
  5. Bake for 8-10 minutes or until the edges are lightly golden and the cookie feels firm to the touch.
  6. Cool & Enjoy: Let the cookie cool for a few minutes before digging in. It’ll firm up even more as it cools.
