For the Muffins:
- 1 cup almond flour

- 2 large eggs

- 1 teaspoon ground cinnamon
- 1/2 teaspoon vanilla extract
- 2-3 tbsp of your favorite sugar-free sweetener, for a sweeter muffin
- Optional: 1/4 cup chopped nuts or sugar-free chocolate chips
For the Peanut Butter Filling:
- 1/3 cup natural peanut butter (code HEALTHYHELPER saves $$!)
- Optional: a dash of cinnamon for extra flavor
For the Topping:
- Additional peanut butter for dolloping on top, optional
- Crushed or chopped peanuts
