Healthy Peanut Butter Stuffed Pumpkin Protein Muffins [Grain-Free + No Added Sugar]

For the Muffins:

  • 1 cup almond flour
  • 1/4 cup Iconic Vanilla Bean Protein (code HEALTHYHELER saves $$!) or Promix Vanilla Whey Protein Powder (code HEALTHYHELPER10 saves $$!)
  • 1/2 cup pumpkin puree (canned or homemade)
  • 2 large eggs
  • 1/4 cup unsweetened almond milk (or milk of choice)
  • 1/4 cup natural peanut butter (code HEALTHYHELPER saves $$!)
  • 1/4 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • 2-3 tbsp of your favorite sugar-free sweetener, for a sweeter muffin
  • Optional: 1/4 cup chopped nuts or sugar-free chocolate chips

For the Peanut Butter Filling:

  • 1/3 cup natural peanut butter (code HEALTHYHELPER saves $$!)
  • Optional: a dash of cinnamon for extra flavor

For the Topping:

  • Additional peanut butter for dolloping on top, optional
  • Crushed or chopped peanuts

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
  2. In a large mixing bowl, combine the almond flour, whey protein powder, baking soda, baking powder, salt, and cinnamon.
  3. In another bowl, whisk together the pumpkin puree, eggs, almond milk, peanut butter, and vanilla extract until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. If using, fold in the chopped nuts or sugar-free chocolate chips.
  5. Spoon a small amount of muffin batter into each muffin cup (about one-third full).
  6. Add a teaspoon of peanut butter to the center of each muffin.
  7. Cover with more muffin batter until the cups are about three-quarters full.
  8. Add a small dollop of peanut butter on top of each muffin and sprinkle with crushed peanuts if desired.
  9. Bake for 18–20 minutes or until a toothpick inserted into the center comes out clean.
  10. Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
