Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a donut pan with oil or cooking spray. In a large mixing bowl, whisk together the almond flour, coconut flour, PEScience Peanut Butter Delight Protein Powder, baking powder, and salt until well combined. In a separate bowl, mix the almond milk, applesauce, peanut butter, vanilla extract, and eggs until smooth. Gradually add the wet ingredients to the dry ingredients, stirring until the batter is smooth and fully combined.

  2. Pour the batter evenly into the donut pan, filling each mold about 3/4 full. Bake for 12–15 minutes, or until a toothpick inserted into the center comes out clean. Let the donuts cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.

  3. In a small bowl, whisk together the peanut butter and Greek yogurt until smooth. Add almond milk as needed to reach your desired frosting consistency.

  4. Once the donuts have cooled completely, spread a thin layer of peanut butter frosting on each donut. Add a small dollop of strawberry jelly on top of the frosting and sprinkle with chopped peanuts for extra crunch.
