  1. Preheat the Oven: Set your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix the Dry Ingredients: In a large bowl, combine oats, whole wheat flour, protein powder, baking soda, cinnamon, and salt.
  3. Prepare the Wet Ingredients: In another bowl, whisk together applesauce, coconut oil, honey (or maple syrup), egg, and vanilla extract until smooth.
  4. Combine Wet and Dry Mixtures: Slowly add the wet ingredients to the dry mixture, stirring until fully combined.
  5. Add Mix-Ins: Fold in the dark chocolate chips, walnuts, cranberries, and raisins.
  6. Scoop and Shape: Drop spoonfuls of dough onto the prepared baking sheet, flattening slightly with the back of a spoon.
  7. Bake: Bake for 10-12 minutes, or until the edges are golden brown. Allow the cookies to cool on the sheet for 5 minutes before transferring to a wire rack.
