  1. Preheat and Prep: Preheat your oven to 350°F (175°C). Lightly grease a 9-inch oven-safe skillet with a bit of coconut oil.
  2. Blend the Dates: Drain the soaked dates and blend them in a food processor with the applesauce until smooth. Set aside.
  3. Combine Dry Ingredients: In a medium bowl, whisk together almond flour, coconut flour, baking soda, and salt.
  4. Mix Wet Ingredients: In a separate bowl, mix the date-applesauce puree, melted coconut oil, egg, and vanilla extract until well combined.
  5. Bring It Together: Gradually add the dry ingredients to the wet ingredients, stirring until a soft dough forms. Fold in the chocolate chips.
  6. Bake: Press the dough evenly into the skillet. Bake for 20–25 minutes or until the edges are golden and the center is set.
  7. Cool and Enjoy: Let the skillet cookie cool for 5–10 minutes before slicing. Serve warm for a gooey texture or at room temperature for a firmer bite.
