  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper or silicone liners.
  2. In a large bowl, whisk together almond flour, protein powder, baking powder, baking soda, cinnamon, and salt.
  3. In a separate bowl, combine eggs, almond milk, vanilla, applesauce, pumpkin puree, melted coconut oil, and maple syrup (if using). Mix until smooth.
  4. Add the wet ingredients to the dry ingredients and gently stir until just combined. Fold in the chopped pecans.
  5. Divide the batter evenly among the muffin cups, filling each about ¾ full.
  6. Bake for 20–22 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
