How to Make a Grain-Free Vegan Chocolate Chunk Skillet Cookie
Simply made with almond flour, sugar-free sweetener, vanilla extract, nut butter of choice, chia seeds, and dark chocolate, this skillet cookie is ready to enjoy in less than 30 minutes.
It’s made by mixing together the wet and dry ingredients until well incorporated, scooping the batter into your prepared skillet, topping it with big chocolate chunks, and baking for 20 minutes.
When you remove the skillet from the oven, you’ll be more than ready to dive into the warm, melty goodness immediately.

This easy-to-make skillet cookie is decadently delicious but also GOOD FOR YOU! It’s packed with healthy fats and fiber thanks to almond flour, seeds, and nut butter. It’s also:

Ingredients
1 cup fine almond flour
1/2 tsp baking powder
1/4 cup sugar-free brown sugar (can swap for brown sugar or coconut sugar)
2 tbsp chia seeds + 3 tbsp water (mix and let sit for at least 5–10 minutes)
1/2 cup nut butter of choice (I recommend this one!)
1 tsp vanilla extract
1/2 of a sugar-free vegan dark chocolate bar (I used this one!), broken into squares
Instructions
Preheat oven to 350 degrees F and grease a small cast iron skillet with oil, set aside.
In a small bowl, whisk together almond flour, sugar, and baking powder. In another small bowl, mix together “chia egg,” nut butter, and vanilla extract. Pour wet ingredients into dry ingredients and stir until just combined. Scoop batter into prepared skillet and press down until evenly distributed.
Press the chocolate chunks into the cookie dough. Place skillet in the oven and bake for 20 minutes. Remove from oven and serve HOT or let cool completely and lift out of the skillet to store!
