  1. Preheat oven to 350.
  2. Combine all the dry ingredients in a bowl. Add in half the grated zucchini and the remaining wet ingredients. Blend together until smooth. Stir in the remaining grated zucchini.
  3. Scrape the batter into a parchment paper-lined 8×8-inch baking dish and bake for 20-24 minutes until done.
