If you follow me on Instagram, you know I’ve been obsessed with the combo of chocolate and cherries together lately. I’ve always been a huge fan of fruit and chocolate together…banana and chocolate, orange and chocolate, strawberries and chocolate…but cherries and chocolate is quickly becoming a new favorite! I also think it’s a perfect pairing for the holiday season. It’s a little non-traditional when you consider flavors like gingerbread, snickerdoodle, and chocolate peppermint…but I think chocolate + cherry deserves to have its day. Especially when you throw in a little coffee too! 😉
Baking with Bob
Holiday (or really anytime of year!) baking isn’t complete without Bob’s Red Mill ingredients on hand. I always have a myriad of Bob’s products in my pantry to make sure I can bake to my heart’s delight whenever the urge strikes. Baking is so cathartic and calming for me. We all know the holiday season can be extra chaotic and stressful, so why not do a little extra baking to ease your mind AND fill your belly with delicious treats…starting with these delicious, dairy-free Mocha Cherry Muffins that I am sharing today. 🙂
Chocolate + Coffee + Cherries
The combo of these three flavors together is just EPIC. Richness and boldness from the coffee and chocolate paired with sweet-tart cherries is unexpected…and delicious!
These whole grain muffins are simply made with a few of my go-to Bob’s Red Mill products as well as other REAL FOOD ingredients including:
- Bob’s Red Mill gluten-free quick oats
- Bob’s Red Mill baking powder
- vegan coffee flavored protein
- vegan sugar-free chocolate chips
- unsweetened cocoa powder
- applesauce
- bananas

Gluten-Free Mocha Cherry Muffins
- Prep Time: 10 minutes
- Cook Time: 22 minutes
- Total Time: 32 minutes
- Yield: 9 muffins 1x
- Category: sweet snacks
- Diet: Gluten Free
Ingredients
1 cup Bob’s Red Mill Quick Oats
1/2 tsp Bob’s Red Mill Baking Powder
1/2 cup liquid egg whites
1 scoop vegan coffee flavored protein (25 grams)
2 very ripe bananas
1/4 cup unsweetened cocoa powder
1/4 cup applesauce
1/4 cup dried unsweetened cherries, chopped
1/4 cup vegan sugar-free chocolate chips
Optional: Chocolate Keto Sprinkles, for topping
Instructions
Preheat oven to 350 degrees F. Line a muffin pan with 9 aluminum muffin liners.
In a food processor, combine all ingredients except cherries and chocolate chips. Puree until smooth. Scoop batter into a bowl and fold in cherries and chocolate chips. Stir until evenly distributed. Divide batter into muffin tins.
Bake for 22-25 minutes or until a toothpick comes out cleanly from the tops of the muffins. Remove from oven and let cool completely before storing in the fridge.
These Gluten-Free Mocha Cherry Muffins make the perfect sweet snack or breakfast. The coffee flavor will certainly perk your up in the morning and the filling protein and fiber will fuel you for the day ahead!

These look delicious and I love mocha and cranberries! I was just commenting that I have so many frozen cranberries in the freezer because I always stock up and was told they are a fall food. Umm no they are delicious year round, it’s not my fault they are harder to find at certain times during the year, which is why I stock up!
