For a quick meatless meal, you can’t go wrong with stuffed peppers! These Five Ingredient Vegan Stuffed Peppers come together in less than ten minutes and are a complete meal with protein, veggies, and whole grains. They’re made from simple household staples and taste amazing!
When I am in a bind or rushing around on a weeknight, I always goal for one-dish dinners. Having lots of components to a meal is great for variety and taste purposes, but when you’re short on time, getting all your nutrients in one complete entree is ideal.
In the summer, that means lighting up the grill and cooking something quick n’ tasty! Grilling is so perfect this time of year. It’s energy efficient, produces the most amazing tasting food, and, hey, it’s just sort of fun. Who says grilling is only for men? 😉
I am especially a fan of grilled stuffed vegetables. I recently shared my Grilled Mediterranean Zucchini Boat recipe and drawing some inspiration from that I decided I wanted to come up with a new dish that’s even simpler to make.
I headed to Target to pick up a few ingredients….
I decided I wanted to make a vegan meal in honor of Meatless Monday and the Griller’s Original Burgers from MorningStar Farms caught my eye (plus they were on sale!) in the frozen aisle. Usually they’d be grilled on their own but I thought they’d be fun to use as a stuffing for a satisfying, meatless main dish. The peppers at my farmers market were looking especially fresh this week as well, so I picked up some of those and went to town on creating a healthy, grilled meal.
With only 5 ingredients, most of which can be bought pre-made, this meal appeals to even the least confident cooks. It’s convenient (you can pick up all the ingredients in one place like Target…which I did), it’s easy to make, and the result is a flavorful, healthy meal that tastes much more gourmet than it is.
Five Ingredient Vegan Stuffed Peppers
Ingredients (3 stuffed peppers)
- 2 MorningStar Farms Grillers Original Burgers
- 1.5 cups frozen southwest vegetable blend (try to find one with black beans in it)
- 1.5 cups frozen brown rice
- 3/4 cup salsa
- 3 bell peppers
- vegan cheese, optional
- olive oil, for sautéing
Instructions
Preheat grill to 400. Remove the stems from the peppers as you would a jack-o-lantern. Microwave the burgers for one minute, one at a time. Finely chop the burgers. Drizzle olive oil in a pan and heat on medium. Add veggies, rice, burger crumbles, and salsa. Saute for 5 minutes or until everything is heated through. Divide mixture into thirds and stuff peppers fully. Sprinkle your choice of vegan cheese on top and place peppers on a baking sheet. Grill for 35 minutes.
Easy right?
So there you have it, a healthy, meatless meal that gives you everything you need: plant-based protein, complex carbs, lots of veggies, and a great southwestern, summer flavor!
