I don’t know about my Dad, but to me this was one of the best Father’s Day in a long time! Not that the other ones haven’t been nice, but everything yesterday went off without a hitch and the whole day felt full of love, happiness, and togetherness! First holiday all back together after being abroad, of course! Here’s how our day was spent…
I was up at 5 due to a continued wacky sleeping schedule (right now it consists of a few hour stints all throughout the night) and fiddled around the house for a few hours before prepping things for a special breakfast for my dad! Peach cobbler pancakes were on the menu!
Peach cobbler is my dad’s favorite dessert and since I had already planned on a different dessert later in the day, I wanted to incorporate the cobbler in some way!
I made whole grain buttermilk pancake with sliced peaches, toasted walnuts, and topped with REAL maple syrup! Nothing beats it.
We made a ton and actually ended up having extra which we were able to freeze for some quick breakfasts later this week! Love how fluffy and flavorful these came out!
After breakfast and some much needed coffee (the good Filippino stuff I brought home!), it was time for presents and cards! I even unveiled the special cake I made for after dinner that night!
My dad opened cards from my mom, my sister, and me and then dove into the gifts I bought him! Dad’s are notoriously hard to buy for so I always try to go for unique, fun gifts….he never truly ‘needs’ anything.
I found this awesome website with shirts featuring slogans from some of our favorite TV shows! Also, cool about them is that they are printed and stitched all right here in the US by workers who receive fair wages. I got my dad a shirt featuring his favorite line from Friday Night Lights….Clear Eyes. Full Hearts. Can’t Lose. He loved it! Even ended up wearing it to dinner!
Also got him a unique (and HEALTHY) alternative to the tobacco he chews during baseball season. I am so worried he’ll get mouth cancer (even though it’s only a seasonable usage) so I wanted to find a product that serves the same purpose but is made of a harmless substance. In this case….coffee! So instead of little backs of tobacco that you stick in the front of your mouth, these ‘Grindz’ are made of coffee and come in all sorts of flavors like cinnamon roll, mocha, and even chocolate mint! Hope he likes them! He’s trying them later today at his baseball game!
The rest of the morning was spent going in the hot tub, getting some chores done, and making a quick trip to the gym (still on the struggle bus after not working out regularly for three weeks…so crazy how fast you lose endurance and strength!).
The afternoon we took a trip to the movies to see The Purge and then go to dinner. The movie was….interesting to say the least. More violent than I was expecting but an interesting concept.
Dinner was at PF Changs! An easy choice since its at the mall where the movie was.
Everything was delicious and we came home for dessert!
Red Velvet cake with cream cheese frosting decorated with baseballs and bats! The baseballs were made from red velvet cookies with white icing and Twizzlers and the bats were Kit-Kats and musketeer bars! It didn’t turn out exactly how I’d envisioned but it was still fun to make! I love making theme cakes.
Overall a great day with the family! Ready to start the new week off on a good note! May even try my first run outside in over a month today! Wish me luck.
