The ultimate homemade breakfast pizza! A whole grain crust topped with eggs, bacon, cheese, and veggies for a delicious morning meal that will get you excited to wake up. Gluten-free and low-fat!
I love a good challenge. Whether it’s trying a new workout, taking on a new job, or going out of my comfort zone…it always gives me a rush of endorphins and a sense of accomplishment for pushing outside of the box.
Coming up with a new recipe is no different! Especially when I am given certain criteria to meet and parameters to fit in.
A few years ago, I was invited to participate in a recipe challenge put on by Quaker Oats Center of Excellence and The National Dairy Council. The challenge was to create a healthy recipe that used both oats and dairy products in a creative, delicious way. I couldn’t resist joining in!
A little about the challenge…
Oats & Dairy: A Powerful Combination Recipe Challenge: Did you know that 99% of Americans do not meet the daily whole grain recommendations and 85% fall short of dairy recommendations? That means you and your family could be missing out on calcium, Vitamin D, potassium and fiber! Quaker Oats and The National Dairy Council are challenging ReDux members to develop creative and tasty breakfasts, snacks or side dishes featuring the power of whole grain oats with the goodness of reduced/low-fat dairy.
Of course I was immediately thinking….”WHAT TO MAKE?!”
Typically when I think of oats and dairy together, the first thing that comes to mind is something sweet like my favorite combo of oats topped with yogurt, using them in baking like my Whole Grain Maple Yogurt Muffins, or to make overnight oats!
But I wanted to get a little more creative and go down a less traditional route with this contest.
I still wanted to stick with breakfast, but I decided I would use oats in a totally unexpected way. And for dairy? Why not go for cheese instead of my usual milk, yogurt, and cottage cheese!
From all that brainstorming…this masterpiece was born!
Eggs & Bacon Oat Crust Breakfast Pizza
A gluten-free, whole grain crust topped with aromatic sautéed veggies, fluffy eggs, low-fat cheese, crumbled turkey bacon, and fresh basil to finish. I took breakfast pizza to a whole new level of YUM with this one.
Eggs & Bacon Oatmeal Breakfast Pizza
The ultimate homemade breakfast pizza! A whole grain crust topped with eggs, bacon, cheese, and veggies for a delicious morning meal that will get you excited to wake up. Gluten-free and low-fat!
- Prep Time: 20 mins
- Cook Time: 25 mins
- Total Time: 45 minutes
- Yield: 8 slices 1x
Ingredients
For the crust:
2 1/4 cup gluten-free oat flour
2/3 cup almond flour
2/3 cup cassava flour
1/2 tsp sea salt
3 tbsp extra virgin olive oil
1 tsp dried basil
1 tsp oregano
1 cup warm water
For toppings:
3 eggs
4 slices of turkey bacon
1/2 beefsteak tomato, chopped
1/4 white onion, chopped
3/4 cup low-fat mozzarella cheese
2 tbsp parmesan cheese
4 fresh basil leaves, chopped
salt and pepper, to taste
Instructions
Mix dry ingredients (minus 1/4 cup of the white whole wheat flour) in a bowl. Add olive oil and mix to combine. Slowly add water and continue mixing until dough is fully mixed. The dough will be sticky and wet at this point. Add in the last 1/4 cup of whole wheat flour and incorporate it into the dough using your hands. Spread dough 1/8 of an inch thick on a pizza stone or on a parchment paper lined baking sheet.
Preheat oven to 400 and prebake pizza crust for 10 minutes.
In a skillet cook bacon according to cooking directions. Once done, place on a paper towel and set aside. In pan that bacon was cooked in, add veggies and saute for about 2-3 minutes. In a bowl whisk eggs. Add veggies and salt and pepper to egg mixture and microwave for a 1-1:30 until eggs are slightly cooked. Pour egg mixture over crust, top with cheese, crumble bacon over top, and sprinkled with basil leaves!
Bake for 15 minutes.
Remove from oven, slice, and serve!
Notes
For a grain-free option: use my No-Fail Cauliflower Crust.
Folks, this is good. Real good. So much flavor packed into such a convenient and delicious food vehicle. And let me tell you, cold breakfast pizza the next day is INCREDIBLE. Though you’ll be lucky if you have leftovers. We didn’t have any the first time I made this.
Crispy bacon, melty cheese, and fluffy eggs all on top of a doughy, soft oatmeal crust? It doesn’t get better!

Yum! I love the savory route with oats!!!!! I love that you developed a pizza recipe that didn’t need the use of yeast and rising. I saw a lot online with that and I just kept thinking I don’t have time for that! This looks easy and delicious, perfect! Breakfast pizza is one of my favorites! My husband and I decided to give it a try when we found ourselves in a bit of a ‘breakfast rut’. Since we needed something for on-the-go days I made them bite-sized in a mini muffin tin.

I may be missing something, but how much water did you add to the crust. I couldn’t find water listed in the ingredients but saw it in the directions.
