It’s August. (HOW!?)
People are already talking about fall.
To me, that is UNACCEPTABLE.
I am a SUMMER girl through and through, so when people start cutting the season short with talk of fall, I get a little upset!
Sure I am all about pumpkin (but that’s a year round thing for me!), cozy sweaters and scarves, fall foliage, and fun seasonal products…but let’s get real! NOTHING beats summer weather, being outside ALL the time, summer running with friends, fresh produce, and summer weekends filled with get togethers and BBQs.
That last part is my favorite part of the season! I am lucky to live near a lot of my family and friends, so a weekend doesn’t really go by that we don’t get together in some sort of capacity for good food, fun, and time with each other!
Being the foodie that I am (and am known to be amongst my loved ones!), I am always asked to bring some sort of dish. Sometimes it’s a main dish (like burgers!) or a fun dessert (like my Vegan Vanilla Almond Ice Cream Cake…a MUST MAKE!!!). But more recently, our get togethers have been more casual as summer is winding down (ugh…I hate even acknowledging that!), so we’ve been doing more potluck style hangouts where everyone brings a snacky/appetizer-like item. Fine with me! You know how much I like snacking!
It’s nice to do a meal based on small bites sometimes. You get to taste and experience so many more foods than you would if there were just 1 or 2 mains and few sides!
When I bring an appetizer to a party, I always try to go for something new and different! Some people warn against that when it comes to cooking for others, but I think it just makes everything more fun and exciting. And don’t worry, I ALWAYS try the food I make before sharing with friends and family…gotta make sure it’s good enough for them, of course!
My recent appetizer/snack obsession!? CRACKER STACKS!
What’s a cracker stack you may ask?! Well inspired by a new variety of sweet and savory crackers I received from Breton (their Artisanal Cranberry and Ancient Grain Crackers, to be specific!), I’ve been layering anything and EVERYTHING on those crunchy spheres of YUM. Stacking up fun ingredients and toppings as high as I can has been the name of the game!
My most recent combination of foods? A TRUE winner in my opinion! It’s got everything you could want in a small bite snack….creamy, crunchy, savory, and sweet all at once! Ideal for satisfying ANY craving you may have.
May I present…Creamy Almond & Fig Cracker Stacks!

Ingredients
- 1 box of Breton Artisanal Cranberry and Ancient Grain Crackers
- Creamy almond butter
- Part skim ricotta cheese
- Dried figs, sliced in half lengthwise
- Dried cranberries
- Toasted almonds, roughly chopped
Instructions
- Liberally spread a cracker almond butter, then add a dollop of ricotta cheese (about a tbsp). Top with half a dried fig, sprinkle with cranberries and almonds, and repeat process with remaining crackers.
A simple appetizer to throw together that is made with REAL, whole food ingredients and tastes amazing. You get a perfect contrast of flavors and textures with the rich almond butter and creamy ricotta, complimented with sweet dried figs and crunchy toasted almonds on top!

This year I’ve actually loved each different season for a different reason. Summer has been AMAZING this year, but can you believe that i used to hate summer? I think God really used my time in Africa 3 years ago to start to change my attitude about summer heat, cause I definitely didn’t change myself. I’ve loved the summer fruit and even the summer heat this year and all the long days!
Crackers + cheese + figs and almond butter sounds dreamy Kaila! We just served some Breton crackers last night at Bible study; they’re so big and substantial; they can handle a lot of toppings.
I usually like a bigger snack, but sometimes I like small (more bite sized) snacks too.
Summer is my absolute favorite!! Even the heat!! I just LOVE it!!
