Soft and fluffy gingerbread muffins with the sweet flavor of coconut! Gluten-free, high protein, and no added sugar…these muffins are perfect for enjoying year round.
It may be the holiday season….but to me, gingerbread is an all year round kind of flavor…just like pumpkin, red velvet, and chocolate peppermint! Who says a certain flavor of dessert has to be reserved to only one specific time of year!? Plus, I’ve had this Coconut Gingerbread Muffin recipe up my sleeves for months and now seemed like the perfect time to share it. But be warned, these muffins are SO delicious, you may just end up eating gingerbread flavored snacks all year round.
Nothing better than a muffin for snacking on with a nice cup of tea or coffee!
Did I mention they’re whole grain and FULL of protein thanks to Natreve Wellness Whey Protein? 🙂
You know I love baking and making snacks with Natreve’s protein powders.
Why Natreve?
Natreve has 3 different lines of protein to accommodate everyone’s different needs.
Their whey line is made with grass-fed collagen for the highest purity & absorption. It’s also:
- 100% New Zealand Whey Isolate
- Grass-fed, Hormone-free, Non-GMO, Gluten-free
- Organic greens, probiotics
- 28g protein per serving
Their Vegan line is honestly the best vegan protein I’ve ever had…in terms of taste, texture, AND nutrition. Each of their flavors is:
- 100% Vegan
- Multi-sourced plant-based protein complex from sprouted & ancient grains
- Gluten-free, Non-GMO
- Contains organic greens and probiotics
- 25g protein per serving
Their Keto Collagen line is for those looking to improve skin and hair health or are following the keto diet. But really it’s great for any one and everyone given all the good stuff it’s got inside:
- 100% pure grass-fed rBGH hormone-free whey isolate
- Collactive™ pure marine collagen
- MCT 70 Acacia
- 10g protein, 13g fats, 1g sugar, 2g net carbs per serving
As I’ve mentioned before, my favorite thing about Natreve proteins (aside from the taste and texture of course!) is that all of their products contain added greens. So you’re getting a ton of important vitamins and minerals with every serving. No other protein on the market can compare!!
Enough chit-chat though. Let’s get to this muffin goodness!

High protein, gluten-free, and so soft n’ fluffy! These muffins are unique combination of coconut and gingerbread flavor. Sweet, delicious, and no added sugar! Gotta love a muffin recipe that doesn’t give you a muffintop! Haha.
So hopefully, we’re on the same page and you won’t totally boycott this recipe even when it’s no longer the holiday season. It’s a good one and totally worth making all year long.

Hmmm…. I really LOVE the muffin tops of those muffins we get from Costco, but I love light fluffy muffins too. I don’t know if I’ve ever had a really unique muffin flavor.
Oooh I wish we had a costco near us!! I’d love to buy some muffin tops!! 😀

I do love a good gingerbread muffin! They look fabulous thanks for linking up
Thanks Deborah! Your soup sounds AMAZING.
Are you concerned with denaturing the protein when you cook it? 350 is relatively low, but whey protein is fragile. I’d be worried it would damage the protein.
I try not to worry to much about things like that! Life is too short!! 😀
Kaila, I am a huge muffin fan. I don’t eat them much now that I’ve gone gluten free, but this recipe looks absolutely delicious. And I try to put a little ginger into most of my foods, it not only has great flavor but it also helps to keep my blood thinned. So this recipe is perfect. Thank you so much for sharing.
