These delectable Chunky Monkey Cookie Bites are everything you could want in a healthy treat! Vegan, gluten-free, no added sugar, and FULL of chocolate goodness. Perfect for snacking on the go!
Oh it’s about to get real yummy up in here, folks. I am not totally down for descriptors like foodporn, foodgasm, and the like….but if I were ever to use those words, NOW would be the time.
I had a cookie craving recently and wanted to make something that was super easy to throw together yet still had the right amount of sweetness to satisfy my sweet tooth! At first I was thinking I’d go for the typical no bake raw energy bite or some sort of protein based bar. But for me, that felt like the easy way out! I wanted to do something I wasn’t already familiar with and break out of my baking comfort zone. So I came up with the following…
CHUNKY. MONKEY. COOKIE. BITES.
Now I know what you’re thinking, Chunk Monkey Cookie Dough Bites? What’s so adventurous about that? Well let me explain. I gave myself the challenge of making these VEGAN, GLUTEN-FREE, and REFINED SUGAR FREE! Of course, that wasn’t too much of a challenge with my favorite Bob’s Red Mill ingredients on hand.
These cookies use:
- coconut flour
- gluten-free quick oats
- ground flax seed
These cookie bites also make a PERFECT homemade holiday gift. Even though you may be apart from your friends and family this year, you can still connect with them and show them how much you care with home baked goods, from the heart. I am definitely paying it forward by sharing home baked gifts using Bob’s Red Mill products.
BONUS…YOU CAN EAT THE DOUGH. These cookies are fully vegan…so no raw eggs or dairy to worry about! Aside from that, these bites are doughy, sweet n’ salty, fully of melty chocolate goodness, and pretty darn good for ya too.
Healthy fats from the nut butter, whole grains from the oats, and lots of delicious points from the extra dark chocolate chips!
Chunky Monkey Cookie Bites
- Prep Time: 10 mins
- Cook Time: 13 mins
- Total Time: 20 mins
- Yield: 12-15 bites 1x
- Category: Sweet Snacks
- Diet: Vegan
Ingredients
1/4 cup nut butter (I used peanut butter)
2 ripe bananas, mashed
1/4 cup unsweetened apple butter
1 tsp vanilla extract
1/2 tsp cinnamon
1 cup Bob’s Red Mill gluten-free quick oats
1/2 cup chopped nuts (I used peanuts!)
2 tbsp Bob’s Red Mill ground flax seed
2 tbsp Bob’s Red Mill coconut flour
1/4 cup no sugar added chocolate chips
Instructions
Preheat oven to 350. In a food processor, blend together bananas, nut butter, vanilla, apple butter, and cinnamon.
In a separate bowl, combine oats, nuts, flaxseed, and coconut flour. Fold wet into dry ingredients and mix until combined. Stir in chocolate chips and mix until evenly distributed.
Using a tablespoon, scoop dough into 12-15 equally sized balls and place on a parchment paper lined baking sheet. Use the back of a spoon to make sure they are uniform in size. Bake for 12-15 minutes or until tops are firm and slightly golden brown. Cool on a wire rack and store in the fridge.
