One thing I am extra grateful for this holiday season? The fact that Buffalo FINALLY has a Whole Foods!
I mentioned it when they first opened a few months back, but now that the holidays are here I am even more thankful to have access to all of their amazing produce and products. There’s just something about having our own store here in Buffalo that makes things so special. And our store really is SOMETHING.
Walking in you’re greeted to the most magnificent array of fresh, seasonal produce you’ll ever see! Don’t get me started on all the squash varieties they carry (hello, squash addicts!). Every aisle is filled with my favorite brands and a TON of local favorites that are exclusive to our store. We have a homemade pizza and kebab bar alongside the famed ‘hot bar’….and there’s even a FULL-SIZE bocce ball court for having some fun on after you’ve had a nice meal! Plus, the in-store bar/restaurant, Bar 1818, has crafted its menu to highlight the flavors, tastes, and foods that Buffalo is known for. I just absolutely love all the detail and care that went in to making this store really unique to Buffalo as a city.
The staff is incredible too. Everyone I’ve connected with so far is so passionate about Whole Foods as a company and SO excited to finally be bringing this brand to Buffalo. It’s been a long time coming, and now that the store is finally here, the city is definitely taking full advantage.
I make a to Whole Foods Buffalo at least once a week! I’ll admit I don’t do my full grocery shop there, but for certain specialty items that I like having on hand, it cannot be beat. Plus, it’s ALWAYS fun to discover new, fun foodie products that you can’t find anywhere else, ya know?
One of my favorite reasons (or rather excuses 😉 ) to make a trip to the store, is when I see a really good deal on the Whole Foods Digital App. Have you downloaded it yet?
It is awesome! For any of you complaining that Whole Foods’ prices are too high, you don’t have any excuses anymore! The Digital App is updated weekly with AWESOME deals on products in every department of the store. Everything from meat and dairy to grocery and home products. I ALWAYS find something that would be on my list anyways.
The app is super easy to use too! All you do is open it, choose your local store, peruse through the current deals, and ‘heart’ your favorites. Then, your favorites are all compiled into a special section of the app with one bar code so they can all be used at once during checkout. So convenient!
The latest deals on the app were so great….I went a little coupon crazy with my purchases! Here’s what I scored…

With all of these good ingredients in my kitchen, I knew I had to whip something yummy up. And with the holidays in mind, I decided to go with something that would be amazing for a family breakfast on a special occasion. A combination of two beloved foods, if you will. 🙂
Chocolate Chip Pancake Muffins. Yep, that’s right. Soft n’ fluffy pancakes you know and love in a handheld, easy to eat form! Perfect for munching while you’re opening presents on Christmas morning or busy in the kitchen getting ready for a day of festivities!
Chocolate Chip Pancake Muffins
- Prep Time: 5 mins
- Cook Time: 12 mins
- Total Time: 17 mins
- Yield: 6 muffins 1x

Ingredients
- 1 cup Arrowhead Mills Gluten Free Pancake Mix
- 1 egg
- 1 tbsp coconut oil, melted
- 2 tbsp Heavenly Organics 100% Raw Honey
- ½ cup non-dairy milk
- ½ tsp cinnamon
- ¼ cup MaraNatha No Salt No Stir Peanut Butter
- ¼ cup SunSpire Unsweetened Carob Chips
Instructions
- Preheat oven to 375. Mix all ingredients together in a large bowl until just combined. Distribute batter evenly amongst 6 muffin tins. Bake for 12-15 minutes.
These delightfully light and airy muffins are gluten-free, full of chocolate deliciousness, and incredibly easy to make. One bowl of mixed ingredients and you’re done! Perfect for making with the kiddos or whipping up during weekend meal prep for a week of quick breakfasts or snacks.
Like I mentioned, all the ingredients that went into this recipe were purchased using coupons/discounts I found on the Whole Foods Digital App. Without the app, I never would have been inspired to make this fun treat. Thank god for Whole Foods, am I right!? 😉

I love banana chocolate chip muffins, and I totally love browsing Whole Foods, but I don’t usually buy a ton there, because they’re kind of pricy. I do like getting a few treat items though.
