  1. Prepare Your Ingredients: Soak the dried cherries in warm water for 5 minutes to soften. Drain and set aside.
  2. Blend the Base: In a food processor, combine the Medjool dates, nuts, and shredded coconut. Pulse until the mixture starts to come together.
  3. Add the Flavors: Add the cocoa powder, True Nutrition protein powder, and softened cherries. Blend until fully incorporated. The mixture should be sticky but not overly wet. If it’s too dry, add water one tablespoon at a time until the desired consistency is reached.
  4. Shape the Bites: Scoop out about one tablespoon of the mixture and roll it into a ball. Repeat with the remaining mixture. Roll the bites in extra coconut if desired.
  5. Chill and Enjoy: Place the bites in an airtight container and refrigerate for at least 30 minutes to firm up. Store them in the fridge for up to 2 weeks or freeze for longer storage.
